Raw Chocolate Cake
INGREDIENTS
FOR THE CRUST
- 1 Cup Almonds 
- ½ Cup Dates 
- ⅓ Cup Cacao Powder 
- 1 Teaspoon Vanilla Extract 
- 1 Tablespoon Maple Syrup 
- 1-2 Teaspoon of Water 
FOR THE FILLING
- 3 Large Ripe Avocados 
- 6 Tablespoon Maple Syrup 
- ½ Cup Cacao Powder 
- Pinch of Sea Salt 
INSTRUCTIONS
- Firstly make the crust by placing the almonds, dates, cacao powder, maple syrup in a food processor and blend until you have a crumbly mixture. 
- Slowly add in the water if needed to make a "dough". 
- Press your crust mixture into a prepared tin. (I used a 15cm tin) Place the tin in the fridge until needed. 
- To make the chocolate mousse layer, peel the avocados and place in a food processor as well as the maple syrup, cacao powder and salt. 
- Blend for 5-10 minutes until smooth. 
- Remove your base from the fridge and smooth the avocado layer over it. 
- Place in the fridge for 15-20 minutes to allow the cake to set. 
- Remove from the fridge and serve with sprinkle of cacao on top and fresh berries.
