Sweet Potato Falafels

INGREDIENTS

  • 1 Medium Sweet Potato

  • 1 x 410gr Tin of Chickpeas

  • 1 Handful Coriander

  • 2 Garlic Cloves

  • 1/2 Onion

  • 1/2 Teaspoon Cumin Powder

  • 1/4 Teaspoon Cayenne

  • Salt and pepper to taste

  • 1/4 Gluten-free flour

INSTRUCTIONS

  1. Preheat oven to 180C

  2. Peel and cut sweet potato in 1cm slices and brush with olive oil

  3. Line a baking sheet with parchment paper and place sweet potato slices on it.

  4. Bake for about 30 minutes and let them cool down slightly.

  5. Mix the baked sweet potato slices with all the remaining ingredients in a food processor. If dough is to wet add a bit more flour and if to dry add a bit of water.

  6. Using your hands, roll the dough into small balls and flatten them a bit. Brush falafel balls with a bit of olive oil

  7. Place on prepared baking sheet by lining it with parchment paper. Place your falafel in the oven and bake for 30-35 minutes, until golden brown outside. Flip them half way.
